The present invention refers to an automatic machine for removing the stem from fruits and vegetables like broccoli, cabbage, cauliflower and the like, characterised in having at least one stem removal head provided with means of grasping a vegetable, acting at the stem and able to hold the vegetable in the zone of action of a movable blade which is to be introduced in the vegetable and able to turn about the axis of action of the aforesaid grasping means in order to separate the stem from the remainder of the vegetable.
