To reduce the level of contamination of processed poultry, pathogen-free or nearly pathogen-free birds must be delivered to the processing plant. An in ovo method of treating embryos with a defined competitive exclusion preparation containing Saccharomyces cerevisiae var. boulardii is especially effective for reducing Salmonella colonization in newly hatched chicks.
