A method and installation for industrially producing precooked seafood dishes in sealed packaging. Cleaned fresh seafood and cleaned and chopped fresh vegetables are poured into a packaging container along with a certain amount of water and optionally some seasoning. The air in the container is removed and the container (25) is hermetically sealed in the device (16). The sealed container undergoes a pasteurizing operation in the tunnel (30) at least at a predetermined temperature and for a predetermined time so that the seafood opens up and is pasteurized and the vegetables are cooked through. The sealed and pasteurized container is then rapidly cooled in the tunnel (31) to a low temperature above 0 DEG C.
