The probe includes a body (A) with a flat surface (S1), a convex surface (S2) and a conic hole (o) which houses a temperature sensor (C). The sensor outputs (2,3,4) are connected to conductors (CR) which transmit a signal representative of the measured quantity value. The sensor hole is positioned close to the surface S1 which is in contact with the body whose temperature is being measured. A number of insulating components (D) protect the electrical conductors. After inserting the sensor in the probe hole this is filled with a protective resin.
