JOBS TEARS MONASCUS AND ITS PRODUCTION AS WELL AS ALPHA TYPE DRY JOB'S TEARS MONASCUS AND FOODSTUFF FORMED BY USING THE SAME

PROBLEM TO BE SOLVED: To provide novel foodstuffs with which the nutrition value and many medical effects possessed by job's tears (Cox lacryma-jobi var. ma-yuen) and monascus and the medical effects of the monascus exhibit synergistic effects by using both of the job's tears and the monascus and raw materials for the same. ;SOLUTION: This process for producing the job's tears monascus consits in culturing the job's tears monascus by a two-stage system consisting of a first-stage fermentation for obtaining the monascus for seed by using rice, wheat or soybeans as raw materials and propagating the monascus and a second-stage fermentation for adding and mixing such monascus to and with the raw material job's tears made sterile by a pretreatment and culturing the job's tears. These foodstuffs are produced by using the resulted job's tears monascus, the α type job's tears monascus obtd. by subjecting the job's tears monascus described above to steam sterilizing and ventilation drying and other food materials.;COPYRIGHT: (C)1998,JPO
