Edible wild mushrooms or cultivated mushrooms are cooked and homogenised for use in foods, except mushrooms containing soured milk products, mushroom-burger, sausage and salami, where it totally replaces meat, and mushroom sauce. The cleaned, optionally sliced mushrooms are fried in vegetable oil or animal fat, then cooked on their own, or mixed with liquid up to half the weight of the mushrooms. Then the product is homogenised, with or without its liquid content. In some cases the liquid is added after homogenisation, directly or in preserved form. If desired, sliced, cooked mushroom may be added, ~ 30% of the weight of the total.
