Brief description of the bleaching in a dry mixture of raw vegetable in particular for the production of fibers vegetable a low content of colories, which are useful as flours dietary.
Process for bleaching (blanching) plant material. The process consists in reacting, in a dry environment, the plant material, which has a moisture content lower than 50 %, with an alkaline hydrogen peroxide solution which has a pH greater than or equal to 8.5 and which contains more than 100 g/l of peroxide, and in then washing the bleached (blanched) material with water before drying it. Application to the manufacture of plant fibres containing a low calorie content, useful as dietary flours.
