The process comprises - manually covering the product, such as ham, as a single piece or cut manually with a layer of refined pork fat; - optionally placing the product in a covering made from sheet plastic material or in the form of a net; - impregnating the product by means of immersion in a bath of wax or silicone, taking into account that the temperature of the bath should be between 25 and 75 degree C; - the product impregnated with wax or silicone is then placed inside a container with water at a temperature between 5 and 15 degree C in order rapidly to cool the layer obtained by means of the said impregnation.
