The process comprises topping and tailing the fruit, separating these end caps from the central part containing the pips of the fruit and proceeding subsequently to remove, by boiling or another system, the central parts of the fruit, generating a juice from which the pips not separated by flotation are separated by filtration, for possible use in the separate marketing of the end caps of the pieces of fruit, the central parts being processed once the pips have been removed, to produce sweet conserves. The machine comprises an endless conveyor belt equipped with a longitudinal line of individual supports for pieces of fruit, these being arranged such that their main axis is transverse to the conveyor belt, the machine having a cutting head which is crossed by the conveyor belt and the supports for the pieces of fruit, possessing cutters for the parallel transverse cutting of the end caps of the pieces of fruit, the machine having devices for expelling the end caps in order to separate them from the central part of the fruit which is expelled at one end of the belt.
