Artificial procedure, and uses thereof, for inducing ribosome-inactivating antiviral proteins, called beetin 27 and beetin 29, in plants of the species Beta vulgaris. A procedure is described for artificially inducing the appearance of the ribosome-inactivating antiviral proteins which we call beetin 27 and beetin 29 in the leaves of plants of the species Beta vulgaris, consisting in the topical application by sprinkling of a liquid solution in water of hydrogen peroxide (H2O2), or salicylic acid or 3-amino-1,2,4-triazole or compounds which produce hydrogen peroxide as a result of the breakdown thereof. The most immediate applications of the procedure are 1) the strengthening of the natural resistance of plants of the species Beta vulgaris to plant viruses, 2) the production of the ribosome-inactivating antiviral proteins beetin 27 and beetin 29.
