Artificial mechanical procedure, and uses thereof, for inducing ribosome-inactivating antiviral proteins, called beetin 27 and beetin 29, in the plant Beta vulgaris (sugar beet). A procedure is described for artificially inducing the appearance of the ribosome-inactivating antiviral proteins which we call beetin 27 and beetin 29 in the plants of the species Beta vulgaris (sugar beet), consisting in mechanically attacking the leaves of the plants of the species Beta vulgaris by cutting or by application of an abrasive. The most immediate applications of the procedure are 1) the strengthening of the natural resistance of plants of the species Beta vulgaris to infection by plant viruses, 2) the production of the ribosome-inactivating antiviral proteins beetin 27 and beetin 29.
