A process for packaging fresh pork and the freshpork package having enhanced visual appeal and shelflife stability, the process including the steps ofintroducing into the pork a treatment solutioncomprising a lactate buffer salt, a phosphatesequestrant and a diacetate flavor enhancement agent,and packaging the pork in a display unit. The displayunit can comprise a thermoplastic tray covered by atransparent film and further packaging one or moredisplay units in a film wrapped container. Theatmosphere within the container can be maintained as ahigh oxygen atmosphere.
