The invention relates to method and device for detecting quantities during milk collection using mobile or stationary collection systems. The milk quantity volume to be delivered over a given distance is detected and determined as it is transferred from a first container to a second container. The inventive method makes it possible to determine the milk quantity without the limiting effect of an air separating jar. This is achieved inter alia by separating the milk flow formed during conveyance into a main flow and a secondary flow, by eliminating the air in the admixtures, by continuously applying and investigating ultrasonic impulses in the main flow and in the deaerated secondary flow and by measuring the respective sound propagation time and at least the temperature in the main flow, by determining the actual mean sound velocity of the flowing milk/air mixture therein and the actual mean sound velocity of the flowing deareated milk from the sound propagation time allocated thereto in the main flow, by calculating the real proportion of milk phi (t) in the main flow on the basis of both sound velocities and the sound velocity in the air at the allocated main flow temperature. The milk quantity conveyed during a collection time tA required to convey the overall milk quantity is determined on the basis of the respective milk proportions phi (t) and the mean flow velocity allocated thereto at a defined point of the conveyance path or on the basis of a defined proportional variable thereof so that a defined point of the conveyance path can be determined along with the effective milk volume VMO for the mass of milk thus transported.
