The invention is to provide a firing system of automated and precisely, in a wide temperature range. The installation comprises at least a cooking vessel (1), a loop circuit (1) of recycling of the fluid, a heat exchanger (8) arranged on this circuit in a loop (i), a pipe (2) of a cooking heated to the higher temperature and a pipe (3) of the fluid heated to the intermediate temperature. A regulation circuit (it) of the heat exchanger (8) is supplied by the higher temperature and the lower temperature, this supply being modulated according to the opening of solenoid valves (ev1, ev5, ev2, ev8). At least three tanks (5, 6, 7) provides the fluid to the temperatures, and less than the predetermined to the circuit in a loop (i) for the tanks of higher temperature and the intermediate (5, 6) is modulated by opening of solenoid valves (ev4, ev3, ev7) and to the regulating circuit (ii) for the tanks of the temperature of the upper and lower (5, 7). The control means (9 to 13) are provided in the recycling circuit (1) and in the cooking container (1) in order to manage the cooking and cooling of food under vacuum.
