The treatment method consists in carrying out continuously using an appropriate conveyor installation the following steps: defrosting by immersion in a bath, a stabilising treatment by spraying, cooking by soaking in a brine bath, washing, cooling by soaking, and draining off. This treatment is carried out by monitoring, according to characteristic parameters of the products namely species, size, condition, i.e. the size and water content of the frozen blocks, the cooking time for determining the rate of the forward progression of the products along the line and the temperature of the defrosting fluid and of the cooling fluid. The installation for implementing the method further comprises arrangements enabling the economising of energy by storing the cooking bath and the cooling bath during the washing and cleaning of the corresponding vats.
