To study the properties of a multiphasic fluid under pressure, such as a petroleum fluid, circulating in a pipe (10), a fraction of the fluid is taken in a first section (12), substantially vertical, of the pipe, in which the fluid is agitated and circulates from bottom to top, and this fraction is transferred to a separator container (20), connecting the top of this container to a second section (16) of the pipeline, placed downstream of the first section and slight depression compared to the latter. The volume ratio of the liquid phases can then be determined, for example by decanting them in the container (20) and measuring their levels, or by passing the liquid emulsion through an appropriate device.
