AGENT FOR IMPROVING YIELD OF BOILED RICE, AND PRODUCTION OF BOILED RICE

PROBLEM TO BE SOLVED: To obtain an agent for improving the yield of a boiled rice, capable of preventing the rice from becoming sticky even if the amount of added water is increased when boiling the rice, and capable of maintaining the good texture over a long time by using a water-soluble hemicellulose as an active ingredient. SOLUTION: This agent for improving the yield of a boiled rice comprises a water-soluble hemicellulose (preferably having 5,000-1000,000 average molecular weight) derived from pulse as an active ingredient. Preferably, the boiled rice is obtained by adding the water-soluble hemicellulose preferably of 0.01-10 wt.% [based on the amount of the rice (expressed in terms of the dried product) ]when boiling the rice, further adding water in an amount regulated so that the water content in the boiled rice may be 55-75% at the time point after passing 30 min from the start of the boiling of the rice, boiling the rice with the added water-soluble hemicellulose and water.
