PROBLEM TO BE SOLVED: To provide a method for producing an aglycone isoflavone-enriched vegetable-proteinaceous substance from a vegetable proteinaceous whey containing an isoflavone complex. ;SOLUTION: This method is to produce an aglycone isoflavone-enriched vegetable proteinaceous whey from a vegetable proteinaceous whey containing an ioflavone complex and comprises (a) a step for treating the vegetable proteinaceous whey with an enzyme at a certain temperature and a certain pH for a time sufficient to convert the isoflavone complex into an isoflavone glycoside and (b) a step for bringing the isoflavone glycoside in the vegetable proteinaceous whey into contact with an enzyme at a certain temperature and a certain pH for a time sufficient to convert at least most of the isoflavone glycoside into the aglycone isoflavone.;COPYRIGHT: (C)1999,JPO
