PROBLEM TO BE SOLVED: To obtain a pumpkin croquette-like sweet potato croquette capable of simply treating the coating without requiring the treatment of an ingredient and having a high nutritive value by heating the flesh of HAYATO-IMO (a kind of a sweet potato having a yellowish brown flesh), granulating the heated flesh and processing the granulated flesh into a dough for the croquette. ;SOLUTION: A flesh of HAYATO-IMO is heated and granulated to prepare a dough for a croquette. The resultant dough is intactly used or mixed with 0.1-50% of the flesh of a pumpkin to prepare a dough for the croquette.;COPYRIGHT: (C)1999,JPO
