PROBLEM TO BE SOLVED: To provide a method facilitating the cleaning of a device made of a stainless steel in food producing equipment and simultaneously modifying the surface thereof and to provide a product thereby. ;SOLUTION: This surface modifying and cleaning method is the one in which a stainless steel is brought to contact with an ozone gas generated by silent discharge with an oxygen-contg. gas as the raw material, and the zero charge point of the stainless steel is moved to the acid side, or a stainless steel contaminated by food components is brought to contact with an ozone gas generated by silent discharge to crack the food contaminated components, and the cleaning time is reduced. Moreover, by this method, a new oxidized film is formed on the surface of the stainless steel to obtain a surface-modified stainless steel product.;COPYRIGHT: (C)1999,JPO
