Apparatus for evisceration of carcasses - cuts open abdomen and breast, allowing intestines to hang from abdominal cavity before being separated from carcass

Carcasses conveyed along a slaughter line are suspended from hooks. The abdomen and breast are first cut open, the hams divided and the fat end loosened. The connections between the intestines and spinal column are broken so that they hang out of the abdominal cavity. The diaphragm and leaf fat are mechanically loosened using a pressing device (5) and a hoop (6) while the intestines are hanging out of the cavity and are connected to the plucks. The device (5) and hoop (6) can be moved independently lengthways of the carcass. The intestines and at least a part of the plucks connected to the intestines are subsequently removed in one piece after cutting free from the carcass. Also claimed is a device for eviscerating carcasses using a first tool (4) to break the connections between the intestines and the spinal column, and a second tool including a hoop (6) and pressing device (5).
