Method and apparatus for separating brain tissue from a head of a slaughtered piece of cattle

A method for separating brain tissue (10) from a head (7; 8) of a slaughtered piece of cattle. A head (7; 8) having a substantially intact brainpan (9) and a spinal canal (11) is started from. A hollow lance (5; 19) having an opening (6; 20) in the area of the free end thereof is passed into the brainpan (9) via the spinal canal (11). The brain tissue (10) is sucked from the brainpan (9) via this lance (5; 19). There is also described an apparatus for performing the method according to the invention. The invention enables the removal of brain tissue (10) from an undivided head (7; 8) in a simple and hygienic manner.
