An enantiomer-enriched mixture contains a 2-hydroxymethylacetic acid derivative of formula R1-CR2R3-C*(H)(CH2OH)-COOM (I) or its salts. R1, R2, R3 = hydrocarbon groups, or two of R1, R2 and R3 form a carbocyclic ring; M = H, a metal equivalent or an optionally substituted ammonium ion.
