The method involves subjecting linoleic or linolenic acid, or one of their precursors of natural origin in the form of a hydrolizate, to lipoxygenase activity, transforming the resulting 13-hydroperoxy-octadeca-9,11-dienoic acid or the 13-hydroperoxy-octadeca-9,11,15-trienoic acid respectively into n-hexanal or 3(Z)-hexen-1-al respectively by means of a lyase, and reducing this aldehyde by means of a yeast to give the n-hexanol or 3-(Z)-hexen-1-ol respectively. Alternatively, the 3-(Z)-hexen-1-al can be isomerized into 2-(E)-hexen-1-al and the latter reduced by means of a yeast to give the 2-(E)-hexen-1-ol. This method offers high yields when forming the above-mentioned aldehydes and alcohols.
