The present invention relates to a process for manufacturing tartrate, calcium, permitting a good industrial yield and providing a product having a purity of at least 50%, on the basis of an alkaline solution of descaling of the vessel to vin such that: - (1) is prepared in an alkaline solution of base containing 140 to 250 grams per liter of tartaric acid potential; - it is acidified (2) the alkaline solution obtained in order that the ph after addition of calcium salt is at most in the end of the reaction is equal to 8 in the reaction mixture thus formed; - it is homogenized (3) the said mixture in which it was added to the calcium salt in order to precipitate the calcium acetate, and it separates (5) by any means, the solid part and wet, containing the tartrate, calcium, of the liquid part which constitutes a filtrate; - (8) is recycled at least a portion of the filtrate by adding, in the preparation of an alkaline solution of base containing 140 to 250 grams of tartaric acid potential per liter.
