PROBLEM TO BE SOLVED: To produce an antibacterial seasoning having complicate thick taste and flavor, increased content of immune antibody and high nutrient value from conventional sodium glutamate seasoning. SOLUTION: The objective seasoning having thick taste and flavor and keeping nutrition and health-promoting property can be produced by adding a fermented liquid of fruit juice of water melon, orange, or the like, to 30-50% sodium glutamate, adding spiral algae, green laver, tangle powder and chlorella effective for increasing immune antibody, adding Tashichi powder (rhizome of Panax notiginseng), olive powder and tea powder containing catechin having blood cleaning action, adding starch, sodium alginate and nutrient calcium citrate, magnesium citrate or potassium citrate, adding Miso (fomented soybean paste) or desalted soy sauce rich in essential amino acids, kneading the mixture, forming in the form of granule and drying the granule at a low temperature. A tasty seasoning effectively usable as a seasoning for ice cream, sausage and seafood processing process, having antibacterial property, useful for the proliferation of immune antibody and keeping other drug actions can be produced by this process.
