PROBLEM TO BE SOLVED: To obtain the subject compound used as a preservative, a stabilizer, a cell activity retaining agent, a moisture-retaining agent, a cold insulator, an antifreezing agent and useful for foods, cosmetics, medicines, etc. ;SOLUTION: A fungus belonging to the genus Pleurotus, e.g. Pleurotus eryngii (ATCC No.36047), Pleurotus cystidiosus (ATCC No. 48751) or Pleurotus sajor. cajn (ATCC No.32078) is cultured in a culture medium and trehalose produced by the fungus is extracted from cap pileus, etc. of fungus and the extract is passed through a cation exchange resin column and an anion exchange resin column and then, subjected to ultrafiltration or diafiltration and treatment with activated carbon in order to purify trehalose to provide the objective trehalose useful in fields such as foods, cosmetics or medicines.;COPYRIGHT: (C)1999,JPO
