PURPOSE: To provide a fast-cookable rice having an excellent instantaneous boiling property and giving good appearance, taste and palatability by converting the raw material rice into α-form, converting a part of the a-rice into β-form, further swelling the rice to form a cavity, and subsequently drying the rice. ;CONSTITUTION: Washed raw material rice is immersed in water, converted into α-form usually by a steaming or boiling method, dried to a water content of 30-45% and subsequently converted into single granules. The granules are cooled and held at 0-5°C, and a part of the rice is converted into β-form and then roasted to form cavities in the rice. The roasted rice is immediately cooled to the ordinary temperature and subsequently dried to a water content of ≤16% to obtain the objective product. A binding-preventing agent and/or rice bran are preferably added to the immersion water for immersing the raw material rice.;COPYRIGHT: (C)1993,JPO&Japio
