PROBLEM TO BE SOLVED: To produce a raw material for brewing a soy sauce using whole soybeans (whole fat soybeans) as a raw material and to provide a method for producing the high-quality soy sauce having UMAMI by using the raw material for brewing the soy sauce. ;SOLUTION: This raw material for brewing a soy sauce is produced by adding water in an amount of 2-15% based on the weight of soybeans to cracked whole soybeans, carrying out heat treatment at 70-130°C for 30-120 min and conducting a processing treatment with a single screw extruder under conditions of 130-190°C material temperature and ≤30 s residence time.
