PROBLEM TO BE SOLVED: To provide a method for processing a peanut by which the peanut is processed into a light food with a low content of oils and fats, the peanut seed itself is processed into a soft state, the husk is made soft and readily peeled just as in the case of green soybeans, the peanut is easily edible by persons ranging from an infant to the aged and the thin membrane can be eaten together with a good appetite and to provide a method for producing the boiled peanut with the husk.;SOLUTION: A peanut with a husk harvested in a state of green leaves just before the withered leaves and maturation period is washed with water and placed in a pressure pot within about 24 h after the harvesting. A saline water in an amount so as to hide all of the peanut is placed in the pot, covered with a lid and heated. When the saline water boils, the boiling is continued for about 5 min thereafter and the heating is then stopped. The peanut is allowed to intactly stand for about 25 min in order to sufficiently permeate salt into each peanut seed in the husk. After completing natural cooling, the lid is opened to quickly drain the peanut seed. The resultant peanut seed is intactly frozen and preserved. The peanut seed produced by the method for production and having the intact thin membrane sticking thereto is eaten by peeling the softened husk.;COPYRIGHT: (C)2000,JPO
