PROBLEM TO BE SOLVED: To obtain an edible salt improved in rich taste and depth and suitable for cooking, etc., by regulating the edible salt using respective prescribed amounts of calcium ion concentration/magnesium ion concentration, sulfate ion concentration/calcium ion concentration and calcium ion concentration as indices. ;SOLUTION: The concentrations of various mineral ions in an edible salt are regulated by concentration ratios indicated by wt.% of components contained in the edible salt of calcium ion concentration/magnesium ion concentration = 0.2-5 and sulfate ion concentration/calcium ion concentration = 0.2-10 and calcium ion concentration of ≥0.05 wt.% as indices to afford the edible salt having a salty taste at concentration ratios indicated by wt.% of the components contained therein of the calcium ion concentration/magnesium ion concentration = 1.0-3.0 and the sulfate ion concentration/calcium ion concentration = 1.0-3.0 and the calcium concentration of ≥0.1 wt.%.;COPYRIGHT: (C)2000,JPO
