PROBLEM TO BE SOLVED: To provide a process for producing glucomannan paste useful mainly for improving the palatability, water retention, or the like, of food.;SOLUTION: A weak alkali ion water is added to a raw material containing ≥60% glucomannan to adjust the final content of glucomannan to 0.1-20 wt.%, the pH to 6-8 and the viscosity to ≥30 000 cps at 25°C.
