PROBLEM TO BE SOLVED: To obtain the subject treating agent capable of reproducing the fresh flavor of vegetables and further the flavor well after cooking, after thawing and also suitable for a thaw-drying by preparing an aqueous solution with adding a sugar and a sugar alcohol and adjusting the concentrations in specific ranges. ;SOLUTION: This treating liquid is prepared by adding a sugar and a sugar alcohol for obtaining an aqueous solution of which concentration is adjusted as 10-60 Brix %. In this case, it is preferable to add 100-200 ppm hypochloric acid in the treating liquid before freezing. Also, as the treatment before freezing of the vegetables, it is preferable to immerse the vegetables in the treating liquid before freezing for a prescribed period of time, and further, the vegetables are allowed to be fragile vegetables.;COPYRIGHT: (C)2000,JPO
