PROBLEM TO BE SOLVED: To produce a shark fin holding a nearly horseshoe-shaped original form and improve merchandise value thereof by improving the present situation in which only muscular fibers for a soup having a low merchandise value are produced from a pectoral fin having a middle bone. ;SOLUTION: The original form of a pectoral fin is cut at a part of a gelatinous substance 6 bonding the top thereof so as not to cut muscular fibers and an edible part 7 is collected and dipped in hot water to remove the epidermis and residual meat. A spatula is inserted into the periphery of a middle bone 3 of a cartilage to pull out and remove the middle bone 3. The edible part 7 is then taken out in the form of a bag and a small pectoral fin of the same kind as that of the pectoral fin subjected to similar treatment, as necessary, is superimposed and inserted into the part after pulling out the middle bone 3. The resultant pectoral fin is then subjected to a drying treatment and thermal swelling treatment and packaging according to a conventional method to product the shark fin.;COPYRIGHT: (C)2000,JPO
