The invention relates to a process for the preparation of reuterin, in which a strain of Lactobacillus reuteri is subjected to batch culturing in an aqueous medium containing up to 20 mmol of glucose and over 50 mmol of glycerol, or else it is cultured in an aqueous glucose- containing medium containing up to 20 mmol of glucose, with the continuous addition of over 50 mmol of glycerol during the culturing period. The strain in question is in particular Lactobacillus reuteri 12002 filed under DSM No. 12246. IMAGE
