Extracellular polysaccharide produced by streptococcus thermophilus

The specification describes isolated exo-polysaccharides originating from Streptococcus thermophilus. The polysaccharide consists of D-galactose, L-rhamnose and D-glucose in molar ratio of 3:2:1. The polysaccharide may be used in flavour reactions and in the preparation of a food, cosmetics or pharmaceuticals, particularly those intended for inhibiting beta-galactoside specific lectins.
