The fresh extrusions of fruits are washed by cold water. Consequently the colorant is extracted by known methods, for example by aqueous solution of ethanol. The contains of inherent substances in obtained concentrate is lowered in 45 to 60 % wt. of antocyanine losses. After vacuum thickening the colouring concentrate containing 8.5 to 40.0 % wt. of antocyanines is obtained.
