THE PRESENT INVENTION PRESENTS THE APPLICATION OF A PECTIN ESTERASE THAT DOES NOT HAVE SUBSTANTIALLY THE ACTIVITY OF DEPOLIMERASE IN THE MACERATION OF APPLE PULP. THE USE OF PURIFIED PECTIN ESTERASE RESULTS IN A SMALL AMOUNT OF PECTIN DEGRADING PRODUCTS IN JUICE AND TO THE CONSERVATION OF PROTOPECTIN IN APPLE PULP. FURTHER, JUICE PRODUCTION AND PRENSABILITY INCREASE WITH THE USE OF PURIFIED PE.
