A ready-to-eat cereal with improved toasted grain flavor is prepared byextruding ahigh-wheat content composition with a tri alkali metal phosphate, e.g.,trisodiumphosphate, and, preferably, a precooked cereal composition having a well-developedbrown flavor profile. In preferred forms, extrusion times will be short, e.g.,less than 1minute, and the formulation will contain malted barley flour, sugar and 10 to20% flour orfines from a fully-cooked, fully-browned, grain-based cereal and at least 60%wheat flour,percents being by weight of the dry ingredients.
