The invention concerns a method for extracting, separating and identifying active principles: proteins, amino acids, glycoproteins, glycosaminoglycans, proteoglycans, contained in the inner and outer shells of marine mollusques, by cold hydrolysis, with acetic acid. The invention also concerns the use of the resulting substances for making preparations for therapeutic use in the treatment of burns, fractures, loss of nutrients in human and veterinary medicine, for formulating cosmetic preparations, culture media, artificial biological membranes, and food supplements.
