PURPOSE: A preparation method of a fermented milk having an angiotensin converting enzyme(ACE) inhibiting effect is provided which can produce peptide having an ACE inhibiting effect in milk without adding separate ACE inhibiting peptide to milk. CONSTITUTION: A method is disclosed for manufacturing a fermented milk having an angiotensin converting enzyme(ACE) inhibiting effect which comprises adding 0.001-2 mg protease based on milky opalescence contained in milk to milk to produce a peptide possessing ACE inhibiting effect and fermenting. The protease is selected from Aspergillus oryzae, Bacillus stearothermophillus, papain, trypsin, pepsin and a mixture thereof. The ferment milk has inherent flavor and an ACE inhibiting effect in maintaining the live bacterial effect of lactic acid bacteria.
