A food product is frozen by a cryogenic fluid as it moves through a chamber. During this movement there is at least one location where the surface of the product in contact with a support is changed. An Independent claim is included for a freezing apparatus for performing as above has a conveyor for transporting products through the chamber and devices for changing the surface of the product in contact with the conveyor. Preferred Features: The conveyor passes up and down respective columns in the chamber. The chamber has pallets supporting the products. The products are flipped over when the conveyor changes direction.
