The present invention provides a soy protein hydrolysate with a low content of &bgr;-conglycinin and a process for producing the same. The soy protein hydrolysate with a low content of &bgr;-conglycinin is prepared by allowing a proteolytic enzyme to act on soybean protein to selectively decompose &bgr;-conglycinin in the soybean protein, and the process for producing the same comprises allowing a proteolytic enzyme to act on soybean protein at a temperature of higher than 50° C. to less than 90° C., preferably 55 to 85° C., more preferably 60 to 80° C.
