PROBLEM TO BE SOLVED: To provide a method for fermenting a miso for a short period of two weeks, by which the temporary concentration of funds for preparing for large amounts of raw materials and the temporary concentration of labors for preparing the raw materials are unnecessary, because the delicious miso can be produced in the ultra short time of two weeks and further because the production of the miso can thereby be carried out in response to the demand, and which enables the compacting of installations, the planned production of the miso, the planned shipment of the miso and the easy production of various products. ;SOLUTION: This method for fermenting a miso for a short period of two weeks comprises irradiating miso raw materials 4 with 7 to 12 μm far IR light by the use of a self temperature control type planar far IR light heater 1, thus fermenting and aging the miso raw materials 4 at a fermentation temperature of 25 to 45°C. Since the self temperature control type planar far IR light heater 1 has a greatly stable temperature distribution and a heating temperature on the whole surface of the heater, the product having a stable quality can be produced, and further, since the heater 1 is an energy-saving type, the installations and production cost can be lowered.;COPYRIGHT: (C)2001,JPO
