PROBLEM TO BE SOLVED: To provide a method for producing pickles and capable of continuously and effectively performing preservation of vegetables or the like with salt. ;SOLUTION: This method comprises showering sheet-like warm saltwater shower jets 18JU and 18JL to e.g. Chinese cabbage 12CC on a conveyer element 14, sterilising the Chinese cabbage 12CC by high temperature of the warm saltwater, bestowing osmotic pressure on the Chinese cabbage 12CC to apply pickling effect (extinction of cells and activation of ferment), accelerating transportation of component at inside and outside of the Chinese cabbage cell organs and transmitting energy and receiving weight stone effect by hydraulic pressure of the shower jet to much increase salting effect.;COPYRIGHT: (C)2001,JPO
