This invention pertains to the field of making delicious fish products using herring fish. The method may be implemented using frozen herring fish fillet as semi-finished product as well as using fresh fillet. The method offered is characterised in that salting process is made in two steps. The first step contains salting non-sliced fish fillet together with skin in maximally saturated solution of salt and preservatives by following equalisation of salt in fish fillet. After that, the fish fillet are separated from skin just before second salting process. The fillet may be cut in 10 to 15 mm slices by perpendicular section according longitudinal axe of fillet. The cutting process is implemented slantwise at an angle of 20 to 45 grade according horizontal surface, from head to tail. The second-step of the salting process and a saturation process with dye-stuffs as food additives could be combined. After pouring off the slices are packed, an infusion is added and tin is sealed. The described method allows to consider the obtained herring fish products as delicious fish products.
