The invention relates to an apparatus for adjusting thelength of dough strands, comprising a receiving gutter, V-shapedin cross-section, whose walls are defined by elements which engagea dough strand placed in the gutter at regularly spaced apartlocations along the length of the dough strand and can exert axialforces thereon. According to the invention, the elements whichdefine the walls of the receiving gutter (3) and engage the doughstrands (10) are formed by rolling members (4,4a) arranged withinterspaces and adapted to be driven progressively and selectivelyfrom the middle (X-X) of the gutter in either direction, andsupport members (9) which convey the strands transversely of thegutter (3) are arranged between the rolling members (4,4a). Themutual arrangement of the gutter (3) and of the support members(9) is variable, at least as to the relative level.
