COMBINATION CONTINUOUS AND BATCH FILTER FOR A RECIRCULATING FRYER

The present invention provides a combination continuous and batch filtrationsystem for a recirculating fryer (10) where the continuous filter (26) andbatch filter (30) assemblies are integrated into a single unit (18), utilizinga common pump (54). This unit is substantially compact and is therefore ableto fit within the frame of most recirculating fryers. The outlets (34, 44) ofthe continuous filter (26) and the batch filter (30) are connected to a two-way valve (42), which is, in turn, connected to the inlet (52) of the commonpump (54). The valve (42) allows an operator to selectively pump cooking fluidfrom either the continuous filter (26) or the batch filter (30) back into thefryer vat (14).
