The invention concerns ieps/i operons involved in the biosynthesis of exopolysaccharides in lactic acid bacteria, and in particular in iS. thermopilus/i. Sequences of said operons are useful in particular for constructing novel ieps/i operons, and for detecting, in lactic acid bacteria, the presence of genes or gene combinations involved in the synthesis of an exopolysaccharide.
