PURPOSE: A method for processing a yellow corbina using bay salt roasted in fire is provided to reduce its fishy smell, improve the quality of its meat, and keep its preservation term. CONSTITUTION: A method for processing a yellow corbina using bay salt roasted in fire comprises the steps of: (i) a first step to store unpolluted bay salt in the shade for a certain time to remove bittern; (ii) a second step to roast in fire of 600-700deg.C; (iii) a third step to preserve a yellow corbina with salt for 2-17 hours; (iv) a fourth step to plait the salted yellow corbina with straw or polypropylene string; (v) a fifth step to wash in clean water; and (vi) a sixth step to dry with a sea wind.
